Day 9 Vegan Challenge!

DAY NINE
JANUARY 16TH, 2012

VEGAN CHALLENGE

The next few posts aren't going to be as descriptive, but will not be lacking in the picture department!

For Cody's birthday he wanted to go to Sublime. It is an awesome all vegan restaurant that gives 100% of its profits to ARFF, The Animal Rights Foundation of Florida! If that wasn't cool enough, you have to try the food! It is totally yummy and even meat eaters love it!!
OMG and the vegan chocolate cake is to DIE FOR !!!

Whats the point?!

After a short bloggin vacay- Orlando and back! I sit here and think,

"Why am I doing this?!"

Well The answer is, at its core, simple... and it might have changed from week to week, but I would like to continue this for one reason,
For people who think vegan food cant taste good,
mostly because they haven't been exposed to it, seen it, or tasted it. They think that they could never give up meat beacuse, well, what is there with out it?! I want to make food that is satisfying for any pallet. I want to make good food that is good food, meatless is just a plus side!
Every time a non vegan tastes my food and are pleasantly surprised, it gives me the greatest sense of joy! Not because I think that they will go vegan, but because they realize, "Wow!! Vegan food can be very good!"
I just hope that I can impact even a few people, to just inspire them to skip one meat meal occasionally, a little do they know, thats a animal's life saved along with their hearts and waistlines.

DAY 8 VEGAN CHALLENGE

DAY EIGHT
January 15th 2012
Vegan Challenge
Breakfast was a blueberry spinach almond milk smoothy with all the trimmings! I am running out of veggies and really need to go grocery shopping! But what I made was yummy and sweet- a little too sweet for me personally, BUT, the baby LOVED it!!

For dinner I made a big pot of chili! It was packed with veggies and was spicy and so yummy! I over cooked it a little big at too high of a heat since hubby came home extremely hungry from work! Topped it with my favorite Dayia cheese- the havarti garlic and jalapeƱo wedge!

Cant wait to eat the left overs!! My husband is going to have a great birthday lunch at work!!

DAY 5 VEGAN CHALLENGE!

DAY FIVE
January 12, 2012
Vegan Challenge
yes...... I have realized the passed few days are a little out of order.. sowie! Bare with me please =P

Saturday Morning I was glad to wake up with my husband off of work! I decided to make a big vegan brunch to start the day off! I made some potatos, tofu scramble and some gluten-free began pancakes!! Might of not been the most healthy nutritious breakfast but sure was it hearty!  The tofu scramble was sooo good that even my mom who is bluntly reassuring about her "love and need for meat and dairy" said that she actually liked it MORE than eggs!!! How amazing is that!

For lunch me and hubbie kept it quick and simple for lunch! Event hough we were not totally hungry yet we knew we had to fill out bellies! We had a baby shower to go to and we were unsure of all the temptation that would be served at the event. We expected it to be like any party, probably cheese and crackers, cake, cookies, all the stuff we do not want to be snacking on before a meal as well because it is not vegan! And we were close, but not quite! We walked into the shower and there was about 3 tables of delicious and cheesy smelling italian good! We were so happy we came full! Chicken, pasta bread and cheese covered all the ingredients! Luckily! There as one big thing of salad and only one out of all the 5 dressings that was vegan! I just munched on a little of that since I ingredients get enough greens for the day!

DAY 7 VEGAN!!

DAY SEVEN!!!
January 14th, 2014

THATS A WHOLE WEEK! WOOP WOOP!!

Unfortunately , even though I should of celebrated my full week with something really good, honestly, I just ate left overs since my husband was working late! Hahaha it was delish though! I did do a nice lunch though! I made a few different flax seed crackers on sunday and used it on top of my tuna salad! It was very yummy even though the miso giner was too sour tasting with the tartness and saltyness of the "tuna"free fish!

DAY 6 VEGAN CHALLANGE!

DAY SIX
Sunday, January 13th 2013

For lunch I made chickpea "tuna" sandwiches! Totally winged the recipe, a little of this, a little of that, taste test and good!.. I am Italian after all!! We had a little sauerkraut salad on the side ! Yumm!!

After I made this I gave some to both my  (non veg) mom and dad try it. My mom actually said she loved it so much, she would actually make this! I am so proud =]

Since it was sunday, this ment my husband was outside doing yard work. What was I doing?!...Making the best flax & chia seed crackers that I have ever made!! I definitely will be making a recipe with this one! Perfect to dip in the humus I made the day before!

For dinner I made one of my new favorite Italian dishes! Sweet potato and zucchini lasagna! I use zucchini instead of pasta and a sweet potato cheese like filling! This time my mom gave me a egg plant so I snuck that in the layers! I top it with red sauce and lots of Dayia cheese!! I made this for the first time when my husbands couisin and boyfriend came over for dinner. They were over the moon and LOVED it!! I still love cooking this dish! It is very filling and so much more healthy for you than normal lasagna, it is gluten free and so much lower in fat than if you used real cheese and added meat in it! Nom nom nommm!! =]
Just look how thick and yummy those layers look!

I am feeling very well and feeling as if this isn't a challenge now but more like... I have made this decision and I don't think I will go back! I already passed craving meat! Occasionally I will smell something with meat or cheese and think YUM- but as soon as the smell goes from my nose to my brain, the craving goes away since I actually know what it took to make that dish. I am pretty creeped out with eggs and all the problems with dairy just done seem appetizing. I really love the food I eat and am really happy!
